Toast – it’s such a simple concept but, with a little creativity, can easily go from ordinary to gourmet!

No matter the time of year, I am always craving light and bright breakfast and brunch foods that are interesting to eat, nourishing for my body and filling, to keep me from snacking all day!

Vegan and Gluten Free Spring Toast

Toast, in its most basic form, often features a simple swipe of butter, peanut butter or jam but, when loaded with good-for-you ingredients, toast can check all of the boxes we need in a breakfast or brunch dish.

I know how challenging it can be to break out of old habits, so to help you explore all of the wonderful flavors that toast can offer, I’ve created six sweet and savory combinations that are sure to please the eyes and taste buds.

Vegan and Gluten Free Spring Toast

When served on gluten free bread, these recipes are completely gluten free and vegan, which makes them a great option for those with dietary restrictions, or if you’re serving guests. Heinen’s has a seemingly endless assortment of gluten free breads, so go wild and choose your favorite. If gluten free options are not a concern, feel free to use any bread you have on hand.

Tomato Ricotta Toast

Ingredients

  • Kite Hill almond milk ricotta alternative
  • Cherry tomatoes, halved
  • Fresh basil
  • Pepper

Instructions

  1. Toast bread of your choice to your liking.
  2. Spread the almond milk ricotta on the bread.
  3. Top with halved cherry tomatoes, fresh basil and pepper.

Crunchy PB&J Toast

Ingredients

  • 1/2 cup raspberries
  • 1/4 cup water
  • 1/4 cup Lakatnto monk fruit sweetener
  • Roasted peanuts
  • Chia seeds

Instructions

  1. Combine the raspberries, water and monk fruit sweetener in a saucepan on the stove. Bring to a boil.
  2. Smash the raspberries and simmer until the sweetener is absorbed.
  3. Strain the syrup into an airtight jar to save for coffee and/or cocktails. Reserve a small portion for the toast.
  4. Toast bread of your choice to your liking.
  5. Spread the raspberry syrup on the bread.
  6. Top with roasted peanuts and chia seeds.
Crunchy PB&J Toast
Avocado Pesto Toast

Ingredients

  • 2 cups basil leaves, packed
  • ½ cup olive oil
  • ½ cup pine nuts
  • 2 garlic cloves
  • ½ tsp. salt
  • Avocado, pitted and sliced
  • Radish, sliced
  • Microgreens
  • Pepper

Instructions

  1. Combine the basil, olive oil, pine nuts, garlic cloves and salt in a food processor or high-powered blender and pulse until your desired consistency is reached.
  2. Toast bread of your choice to your liking.
  3. Spread the pesto on the bread.
  4. Sliced the avocado into thin slices and layer them on top of the pesto.
  5. Top with radishes, microgreens and pepper.

Cucumber Hummus Toast

Ingredients

  • Heinen’s hummus
  • Cucumber, sliced
  • Pepper
  • Fresh dill

Instructions

  1. Toast bread of your choice to your liking.
  2. Spread the hummus on the bread.
  3. Top with sliced cucumbers, pepper and fresh dill.

Blueberry Peanut Butter Toast

Ingredients

  • Heinen’s freshly ground peanut butter
  • Blueberries
  • Cinnamon
  • Honey, omit for vegan

Instructions

  1. Toast bread of your choice to your liking.
  2. Spread the freshly ground peanut butter on the bread
  3. Top with fresh blueberries, cinnamon and a drizzle of honey.

Chocolate Strawberry Toast

Ingredients

  • 1/2 cup Heinen’s freshly ground peanut butter
  • 1/4 cup Heinen’s pure organic maple syrup
  • 2 Tbsp. cocoa powder
  • 3-4 Tbsp. coconut milk
  • Strawberries
  • Cacao nibs

Instructions

  1. Combine the peanut butter, maple syrup, cocoa powder and coconut milk in a food processor or high-powered blender. Blend until smooth. Add more or less nut milk depending on your desired consistency.
  2. Toast bread of your choice to your liking.
  3. Spread the chocolate mixture on the bread.
  4. Top with strawberries and cacao nibs.

In 1929, Joe Heinen opened the doors of a small butcher shop on the east side of Cleveland, Ohio, aiming to establish himself as the city’s purveyor of quality meats. As customers came into Heinen’s new shop for their meat purchases, they began asking him to carry groceries as well. Joe added homemade peanut butter, pickles and donuts and by 1933, business had grown enough to include a line of produce and canned goods. Heinen’s Grocery Store was born.
