Easy Picnic-Inspired Dinner

Picnic with Fruit, Pasta Salad and Rotisserie Chicken

Take dinner outdoors with a simple picnic-inspired supper that calls for less than 10 ingredients!

This family friendly meal comes together in about 20 minutes and can easily be prepared in advance. Need more reason to get inspired? Everything here is delicious cold or warm, making it the perfect picnic spread!

The Menu

  • Chilled Rotisserie Chicken
  • Pesto Tortellini Pasta Salad
  • Balsamic Green Beans
  • Sliced Peaches and Blueberries

The Shopping List

  • 1 pint grape tomatoes
  • 1 lb. fresh green beans
  • 2 peaches
  • 1 pint blueberries
  • Buitoni three cheese tortellini
  • Heinen’s pesto sauce
  • Heinen’s organic balsamic vinaigrette
  • Shaved parmesan cheese
  • Heinen’s rotisserie chicken, chilled

The Recipes

Pesto Tortellini Pasta Salad 

  1. Prepare the tortellini according to the package instructions.
  2. Drain and rinse under cold running water.
  3. Toss with 1/3 cup of Heinen’s pesto sauce and 1 pint of halved grape tomatoes.
  4. Refrigerate until ready to serve.

Balsamic Parmesan Green Beans 

  1. Trim the green beans.
  2. Place the green beans in a microwave-safe casserole dish. Add just enough water to cover the bottom.
  3. Seal tightly with plastic wrap and microwave on high for 3-4 minutes, or until just crisp-tender.
  4. Carefully remove the plastic wrap (the steam will be hot) and drain.
  5. Rinse the beans under cold running water and pat dry. Toss with 3-4 Tbsp. of Heinen’s organic balsamic vinaigrette and 1 oz. of shaved Parmesan cheese.
  6. Refrigerate until ready to serve.

Serving Instructions

  1. Slice the peaches and gently toss with the blueberries.
  2. Divide the cold rotisserie chicken pieces among 4 plates and serve with a side of tortellini pasta salad, green beans and fruit.
