Vegan Roasted Chickpeas 3 Ways

If you like the salty crunch of potato chips, you’ll find roasted chickpeas equally irresistible!
Probably sitting in a can in the back of your pantry, chickpeas are a goldmine of nutrients. High in protein, fiber and healthy fat, you’ve likely enjoyed them in hummus or on salads, but a quick roast in the oven turns these little legumes into a healthy and satisfying snack!
On their own, chickpeas can taste a bit bland, so I’ve created three vegan seasoning blends that add loads of savory flavor.
Great for topping salads or snacking on-the-go, make a big batch and enjoy them throughout the week!
Vegan Roasted Chickpeas 3 Ways

Ingredients
Ranch Roasted Chickpeas
- 1 can Heinen's chickpeas
- 1 Tbsp. avocado oil
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1/4 tsp. dried parsley
- 1/4 tsp. dried dill
- 1/4 tsp. dried chives
- 1/4 tsp. dried cilantro
- 1/4 tsp. salt
- A crack of black pepper
- 2 tsp. coconut milk powder
Lemon Garlic Roasted Chickpeas
- 1 can Heinen's chickpeas
- 1 Tbsp. avocado oil
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1/4 tsp. salt
- A squeeze of fresh lemon
Taco Roasted Chickpeas
- 1 can Heinen's chickpeas
- 1 Tbsp. avocado oil
- 1/2 tsp. chili powder
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/8 tsp. dried oregano
- 1/4 tsp. paprika
- ½ tsp. cumin
- 1/4 tsp. salt
Instructions
- Preheat the oven to 400˚F.
- Drain and rinse chickpeas, then dry thoroughly. Remove any loose skins.
- Line a baking sheet with parchment paper.
- Pour the dry chickpeas into a bowl and add the avocado oil and seasonings for one of the three combinations above. Stir to coat evenly.
- Spread the chickpeas on the baking sheet.
- Bake for 25 minutes, toss and return to the oven for 25 more minutes.
- Remove from oven and allow to cool before enjoying.
