Twice Baked Spaghetti Squash

Ingredients

  • Spaghetti Squash Halves
  • Heinen's Cooked Organic Quinoa Bowl
  • Heinen's Baby Spinach
  • Heinen's Recipe-Ready Diced Tri-Color Bell Peppers
  • Two Brothers Mandarin Orange Sauce

Instructions

  1. Place squash flesh-side down in a glass baking dish and add about 1/2 inch water to the pan.
  2. Microwave squash uncovered, on high for approximately 10-15 minutes until squash is tender. Turn squash over to drain.
  3. While squash is still warm, use a fork to scrape spaghetti strands to loosen and separate.
  4. Place strands in a bowl, combine with quinoa, spinach and bell peppers. Add Mandarin Orange Sauce, salt and pepper to taste.
  5. Place mixture back into squash shell. Put stuffed squash in an ovenproof dish and bake in a 350-degree oven until top is nicely browned.
  6. Garnish with a sprinkle of chopped cilantro and toasted sesame seeds.

In 1929, Joe Heinen opened the doors of a small butcher shop on the east side of Cleveland, Ohio, aiming to establish himself as the city’s purveyor of quality meats. As customers came into Heinen’s new shop for their meat purchases, they began asking him to carry groceries as well. Joe added homemade peanut butter, pickles and donuts and by 1933, business had grown enough to include a line of produce and canned goods. Heinen’s Grocery Store was born.
