Leftover Mashed Potato Balls

Thanksgiving leftovers are delicious, but they can also get a little boring if you don’t switch up how you serve them. Practice some magic with your leftover mashed potatoes by creating these easy, cheesy, and “poppable” mashed potato balls!
These would be a delicious addition to a post-holiday brunch or a game day watch party or tailgate!
To make these Leftover Mashed Potato Balls, you simply combine mashed potatoes with chives, Heinen’s Hand-Selected Cheddar, eggs, spices, and breadcrumbs. Once they’re rolled into balls, you lightly fry them and serve with leftover cranberry sauce and gravy for dipping. They’re almost as easy as hitting the “reheat” button on the microwave!

Leftover Mashed Potato Balls

Ingredients
- 4 cups leftover mashed potatoes
- 1/2 cup chopped chives
- 1/2 cup shredded Heinen's Hand-Selected Wisconsin Cheddar Cheese
- 1/2 cup shredded Heinen's Hand-Selected A2 Grass Fed Organic Extra Sharp Raw Cheddar Cheese
- 2 Heinen's cage free eggs
- 1/2 tsp. Heinen's garlic granules
- 1/2 tsp. black pepper
- 2 cups Heinen's plain breadcrumbs, divided
- 2 cups Heinen's extra virgin olive oil
- Leftover cranberry sauce and gravy, for serving
Instructions
- In a large bowl, combine the leftover mashed potatoes, chives, shredded cheese, eggs, garlic, black pepper, and 1 cup of breadcrumbs.
- Scoop a spoonful of the potato mixture and roll it into a ball.
- Coat the mashed potatoes in the remaining 1 cup of breadcrumbs. Repeat until all of the potato mixture has been used.
- Heat the olive oil in a deep pan or sauce pan over medium heat until simmering. Add 3-4 mashed potato balls at a time and fry until golden brown. This will take about 4-5 minutes. Repeat until all of the mashed potato balls are fried.
- Serve with leftover cranberry sauce and gravy for dipping. Enjoy!
