Teriyaki Salmon with Spinach

Simple doesn’t have to mean boring! This delicious meal has just a few ingredients, but packs big flavor.

Ingredients

Two 8 ounce salmon fillet
1 cup of Two Brother’s Teriyaki Sauce
4 cups of packed baby spinach
juice of 1 lime
2 tablespoons of sliced green onions
1 tablespoon of olive oil
Kosher salt and fresh cracked pepper to taste

Preparation

Place the salmon fillets in a bowl and pour the marinade on top and place in the refrigerator for at least 1 hour.

Preheat the grill to high heat.

Place the marinated salmon fillets skin side down on a hot grill and cook for 5 to 7 minutes.  At this point pull the salmon directly away from the skin and flip over to cook on the other side for a further 3 to 4 minutes. Discard the skin.

Once the salmon is done, remove from the grill and set aside to rest for a few minutes.

Next, heat a large saute pan to high heat and add in the oil and spinach and saute for 2 minutes or until the spinach is wilted. Deglaze with the lime juice, garnish with scallions and season with salt and pepper.

To plate: place the spinach in a bowl and top off with the salmon.
