This Paleo Bruschetta Chicken with Honey Balsamic Glaze is bursting with fresh flavors and nutrients that are so delicious it’s likely you’ll feel you’re dining at your favorite Italian spot. The dish is easy to prepare and takes just about 30 minutes from start-to-finish. It’ll take you even less time if you have a helping hand in the kitchen with you!

Paleo Bruschetta Chicken with Honey Balsamic Glaze

Ingredients

For the Chicken

  • 1 lb. Gerber’s CARE Certified chicken breasts
  • 2 Tbsp. Heinen’s extra virgin olive oil
  • 1 tsp. Heinen’s onion powder
  • 1 tsp. Heinen’s garlic powder
  • 1 Tbsp. Heinen’s Italian seasoning
  • A squeeze of fresh lemon
  • A pinch of salt

For the Honey Balsamic Glaze

  • 1/2 cup balsamic vinegar
  • 2 Tbsp. raw honey

For the Bruschetta

  • 2 cups tomatoes, diced (can be whatever tomatoes you like, but avoid seeds and soft pieces)
  • 2 garlic cloves, minced
  • 1 Tbsp. Heinen’s extra virgin olive oil
  • 1 Tbsp. balsamic vinegar
  • 1/3 cup fresh basil, roughly chopped
  • Salt and pepper, to taste

Instructions

For the Chicken

  1. Mix together all of the ingredients, except for the chicken, until evenly combined.
  2. Cover the chicken in the marinade and cook on the stove or on a grill until cooked through.

For the Honey Balsamic Glaze

  1. While the chicken is cooking, add the balsamic and honey to a separate pan on the stove over medium heat and simmer until bubbling.
  2. Once simmering, change the heat to medium-low and let reduce (thicken) for 10 minutes, stirring often.
  3. Allow the glaze to cool. If the glaze hardens, simply reheat it slightly in the microwave in 15 second increments.

For the Bruschetta

  1. Dice the tomatoes, mince the garlic and chop the basil.
  2. Add all ingredients to a bowl and mix gently to combine.

To Serve

  1. Plate the chicken and top with the bruschetta and a drizzle of the balsamic glaze. Garnish with fresh basil and enjoy!

In 1929, Joe Heinen opened the doors of a small butcher shop on the east side of Cleveland, Ohio, aiming to establish himself as the city’s purveyor of quality meats. As customers came into Heinen’s new shop for their meat purchases, they began asking him to carry groceries as well. Joe added homemade peanut butter, pickles and donuts and by 1933, business had grown enough to include a line of produce and canned goods. Heinen’s Grocery Store was born.
