How to Cook Crispy Fish and Chicken
Ingredients
For the Fish
- 8 ounce fillet of fresh fish
- 1 tablespoon of oil with a smoking point between 375° and 400°
- 1 tablespoon of unsalted butter
- juice of ½ lemon
- salt and pepper to taste
For the Chicken
- 1 skin-on chicken breast
- 1 tablespoon of oil with a smoking point between 375° and 400°
- 1 tablespoon of unsalted butter
- 3 to 4 garlic cloves
- 4 to 6 sprigs of fresh thyme
- salt and pepper to taste
Instructions
1. For the Fish: Season the fish on all sides with salt and pepper.
2. Next, heat a skillet over medium-high heat and add in the oil. Once the oil begins to lightly smoke add in your seasoned fish and then the butter immediately. Cook the fish for 4 to 5 minutes and then flip it over.
3. Baste the fish and cook for a further 3 to 4 minutes or until golden brown and cooked throughout.
4. Deglaze with juice from ½ lemon and serve.
5. For the Chicken: Preheat the oven to 350°.
6. Season the chicken on all sides with salt and pepper.
7. Next, heat a skillet over medium-high heat and add in the oil. Once the oil begins to lightly smoke add in your seasoned chicken and cook for 3 to 4 minutes and then add in the butter, garlic and thyme and cook for another 2 to 3 minutes or until golden brown.
8. Flip the chicken over, cook for 2 minutes and then place in the oven at 350° for 8 to 10 minutes or until it is cooked throughout.
9. Slice and serve.
