Elevate your next summer brunch with fresh local heirloom tomatoes served on top of crispy sourdough garlic toast with a whipped feta spread.

Any variety of tomato can be used, but I suggest using colorful local heirlooms found in the Produce Department of any Heinen’s. Their flavor is juicy and perfect for toast!

Whipped feta is all the craze right now and very simple to make! Another option is to whip crumbled goat cheese in place of the feta. Sprinkle the toast with za’atar for an added Mediterranean flavor!

Heirloom Tomato Garlic Toast with Whipped Feta

Ingredients

For the Heirloom Tomato Garlic Toast

  • 8 slices Heinen's sourdough bread
  • 8 Tbsp. Heinen's butter, room temperature
  • 2 garlic cloves, minced
  • 2 tsp. za'atar or sumac {optional}
  • 4-5 small heirloom tomatoes, sliced
  • Fresh basil and parsley, for garnish
  • A dash of salt and pepper

For the Whipped Feta

  • 7 oz. Heinen's crumbled feta cheese
  • 2 Tbsp. Greek yogurt
  • 1 Tbsp. Heinen's extra virgin olive oil
  • 2 garlic cloves, minced
  • 1 Tbsp. lemon juice

Instructions

  1. Preheat the oven to 350° F
  2. In a small mixing bowl, combine the room temperature butter and minced garlic.
  3. Lay the sourdough bread on a cutting board. Spread a thin layer of the garlic butter on each piece of bread. Sprinkle za’atar on top of the butter, if desired.
  4. Toast the bread in the oven for 5-8 minutes, until toasted and slightly crispy.
  5. While the toast bakes, add the feta cheese, Greek yogurt, olive oil, garlic and lemon juice to the bowl of a stand mixer. Mix on medium speed for 3-4 minutes until whipped. A hand mixer can also be used.
  6. Remove the toast from the oven and spread the whipped feta on each piece.
  7. Add the heirloom tomatoes on top of the whipped feta.
  8. Sprinkle the fresh basil, parsley and more za’atar, if desired.
  9. Serve immediately.
