Have you ever been to a party and someone is assigned to bring a cake, then they bring some sort of vegetable cake? Unfortunately, I am that person, but don’t rescind my invite just yet. I’ve created two types of watermelon pizzas for you to bring to your next pizza party!

Watermelon Pizzas

The first pizza to kick off this party is a savory grilled watermelon pizza. Its kissed with high heat, then loaded with arugula, feta, prosciutto and Heinen’s balsamic glaze. I was feeling a bit nuts, so I also added pecans. Each bite is an absolute flavor explosion and the flames add a unique flavor to the watermelon, but what I love most is the smell of the grilled watermelon. I can’t describe it, but it’s a very comforting aroma that gets me in the mood to feast! Heinen’s glaze with balsamic vinegar of Modena was seemingly made for this recipe. Its sweet, tangy and tart all at the same time. It works wonders when drizzled over the hot watermelon and cool feta. I keep a bottle of this glaze in my cupboard at all times and I highly advise you do the same.

The second ‘za is kept off the grill and served when the party is ready to cool down. This one is sauced with vanilla bean yogurt and topped with an array of Heinen’s fresh fruit. Eating this poolside is what summer dreams are made of. Get the kids involved, too! This is a fun one for each kid to customize their slice with their favorite fruit. My daughters had a blast creating their own masterpieces.

Ingredients

For the Savory Grilled Watermelon Pizza

  • 2 round slices of watermelon
  • 1/4 cup arugula
  • 4 slices prosciutto
  • 1/4 cup Heinen's feta cheese
  • 2 Tbsp. pecans
  • 2 Tbsp. Heinen's balsamic glaze

For the Watermelon Dessert Pizza

  • 2 round slices of watermelon
  • 8 oz. Noosa vanilla bean yogurt
  • 2 Tbsp. Heinen's honey
  • Raspberries, blackberries, kiwi, coconut, flax seed, etc.

Instructions

For the Savory Grilled Watermelon Pizza

  1. Prepare the grill for direct grilling, or cooking directly above the hot coals.
  2. Slice the watermelon into large circles, at least a half an inch thick. If sliced any thinner, they will not be able to support the toppings.
  3. When the grill is piping hot, add the watermelon slices. Grill for 2 minutes, then rotate 90 degrees for an additional minute. Flip and repeat this process on the other side, 6 minutes total. This will create grill marks good enough to play checkers on.
  4. Remove from the grill and slice into 6 even slices. Top with arugula, feta, prosciutto and a drizzle of the balsamic glaze. Finish with a pecan on each slice. Serve hot.

 

For the Watermelon Dessert Pizza

  1. The dessert pizza is great to make ahead of time as it stores well in the refrigerator.
  2. Slice the watermelon into six equal slices.
  3. Top each slice with a Tbsp. of yogurt, then place berries, kiwi and whatever toppings you like on top. Drizzle with honey before serving!
