These DIY ice cream sandwiches are the perfect treat for hot summer days. They feature Heinen’s all butter chocolate chip cookies and Heinen’s Neapolitan ice cream, which is made in Ohio by one of our longtime vendor partners.

Neapolitan ice cream is great because you can enjoy three different ice cream sandwich flavors from just one tub of ice cream! The cookie sandwiches are rolled in mini chocolate chips, but they can be rolled in other toppings like sprinkles and chocolate sandwich cookie pieces too.

Ingredients

  • 1 cup Heinen's semi-sweet mini chocolate chips
  • 1 container Heinen's all butter chocolate chip cookies
  • 1 tub Heinen's Neapolitan ice cream

Instructions

  1. Pour the mini chocolate chips into a shallow bowl and set aside.
  2. Flip a cookie over on a plate and place a generous scoop of ice cream on top. This can be strawberry, chocolate, vanilla or a combination of all three! Use an ice cream scoop to gently spread the ice cream to the edges.
  3. Sandwich a cookie on top. Then pick up the sandwich and gently press both cookies together.
  4. Roll the sides of the sandwich in the mini chocolate chips until the ice cream is completely coated.
  5. Set on a plate in the freezer and repeat with the remaining chocolate chip cookies.
  6. Serve immediately and enjoy! Freeze leftover cookie sandwiches in a freezer-safe bag for up to 3 months.
