Think of the salads you typically see at outdoor BBQs and picnics. If I had to guess, pasta salad, potato salad and green salads are probably first to come to mind.

That’s right, with a container of Heinen’s fresh cooked shrimp and a small handful of everyday ingredients, you can create this cold shrimp salad featuring a creamy citrus dressing that rivals any of the seasonal salad classics.

Ingredients

For the Shrimp Salad

  • 1 container Heinen’s fresh cooked shrimp
  • Heinen's chili powder
  • Heinen's black pepper
  • Heinen's cumin
  • Salt
  • 1 large English cucumber, chopped
  • 2 celery stalks, chopped
  • 2 small tomatoes, chopped
  • 1 package Heinen's mozzarella pearls
  • 1/4 cup green onions, chopped
  • Lemons and limes, cut into segments for garnish

For the Creamy Citrus Dressing

  • 1/2 cup fresh dill, chopped
  • 1 Tbsp. Heinen’s extra virgin olive oil
  • 1 Tbsp. lemon and lime zest, combined
  • Juice of 1 lemon
  • 1 tsp. white wine vinegar
  • 1/2 tsp. black pepper
  • 2 tsp. agave nectar
  • 1/2 cup Greek yogurt
  • 1/2 tsp. Heinen's chili powder
  • 1/4 tsp. sea salt
  • 1/2 tsp. Heinen's cumin
  • 1/2 tsp. Heinen's garlic powder

Instructions

  1. Chop the cucumber, celery, tomatoes and citrus. Set aside.
  2. Combine the chili powder, black pepper, cumin and salt in a bowl and toss with the shrimp.
  3. Toss the shrimp with the mozzarella pearls and chopped produce, excluding the segmented citrus and green onions.
  4. Whisk the dressing ingredients until combined.
  5. Pour the dressing over the salad and mix to coat.
  6. Top with the green onions, segmented citrus and more dill.
