Bacon-Wrapped Scallops
Servings: 8 (2 Scallops per Person)
Ingredients
- 1 package Heinen’s CARE Certified bacon
- 16 Heinen’s fresh sea scallops
- Salt and pepper, to taste
- 1 Tbsp. Heinen’s extra virgin olive oil
- 2 Tbsp. Heinen’s unsalted butter
- Fresh rosemary, for serving
- Fresh lemon, for serving
Instructions
- Heat a large skillet over medium heat. Add the bacon in a single layer and fry for 5 minutes per side, until the fat starts to render, but the bacon is not fully cooked. Repeat in batches as needed.
- Remove the side muscle of the scallops and pat completely dry. Season both sides with salt and black pepper.
- Carefully wrap each scallop with a prepared bacon slice and secure with a toothpick.
- Heat the skillet over medium heat and add the olive oil. Add the prepared scallops and cook for 2-3 minutes per side, until golden brown. Do not move the scallops while searing. Once you’ve flipped the scallops, add the butter and baste.
- Serve with fresh rosemary and a squeeze of fresh lemon.
