How to Cook Pork

Pork has a reputation for being challenging to cook, but that’s simply not true!

Pork Chops

Cooking Methods

For tender and juicy pork chops, cook to a 145°F internal temperature.

  • Bake 425°F for 10 minutes
  • Air Fry: 400°F for 10 minutes
  • Stir Fry/ Sauté: 5-10 minutes
  • Grill:
    • Bone-In (3/4-inch): 8-12 minutes
    • Bone-In (1 1/2-inch): 22-35 minutes
    • Boneless (3/4 inch): 8-12 minutes
    • Boneless (1 1/2-inch): 12-22 minutes

Ribs

Cooking Methods

Cook to an internal temperature of 190-200°F to ensure fall off the bone tenderness.

  • Grill: Medium low heat for 1 ½ – 2 ½ hours
  • Bake: 275°F for 3 ½ to 4 ½ hours
  • Braised or Slow Cooked in liquid:
    • Low: 7-8 hours
    • High: 4-5 hours

Pork Roasts

Cooking Methods

Pork Shoulder Roast:

  • Braise or slow cook pork shoulder in liquid on low for 6-8 hours or high for 4-5 hours to a 170°F internal temperature. Let rest for 10-15 minutes before shredding.

Pork Loin Roast:

  • Roast or grill using indirect heat for 20 mins per lb. to a 145°F internal temperature.  Let rest for 10-15 minutes before slicing.  Tip: Pork loin roasts should not be braised or stewed as they become tough when cooked using moist heat.

Pork Tenderloin Roast:

  • Roast, grill or sauté using high heat for 20-25 minutes to a 145°F internal temperature.  Let rest for 3 mins before slicing. 

Pork Steaks

Cooking Methods

Cook pork blade steaks to a 145°F internal temperature, followed by a 3-minute rest to ensure juiciness.

  • Grill: Covered on low heat for 12 minutes per side + an additional 5 minutes per side uncovered
  • Stovetop: Sear for 2 minutes per side, then simmer for 8-10 minutes

Pork Cutlets

Cooking Methods

For tender and juicy pork cutlets, cook to a 145°F internal temperature.

  • Bake: 400°F for 12-15 minutes
  • Stovetop: 4-5 minutes per side on medium-low heat
  • Air Fryer: 360°F for 9 minutes, flipping halfway through

Recommended Temperatures

Medium-Rare: 145-150°F

Medium: 150-155°F

Medium-Well: 155-160°F
